Insect-eating, or entomophagy, is Shapiro’s obsession of the past few years, and she’s not alone. All of this coheres with a long-standing critique of how we eat: the unsustainable amount of water, feed, and land meat-eating requires. Bugs, being coldblooded and short-lived, with a preference for cramped spaces, turn what they eat into protein for us much more efficiently than a cow does.
